Chef Shellon Allison, professionally known as Chef I'Lon, has a passion for transforming everyday vegetables into exquisite, fine-dining-quality dishes. She is celebrated for elevating the flavors of simple ingredients into culinary experiences that delight the palate. Raised in the countryside of Guyana, South America, Chef I'Lon was brought up by her grandmother, the matriarch of the family and head chef at the renowned Coal Pot Restaurant in Guyana. Her grandmother, a master of Afro-Caribbean cuisine, also mastered Chinese culinary techniques, passing on her knowledge and love for food to her children and grandchildren. From a young age, Chef I'Lon absorbed the aromas, techniques, and wisdom of her grandmother's kitchen, learning that food is not only nourishment but also a vehicle for healing the body, mind, and soul. Fascinated by the power of food to nurture and restore, she pursued a path that combined her passions, becoming a nurse, herbalist, and chef. Today, Chef I'Lon continues this legacy, creating dishes that heal, inspire, and transform.
